Cauliflower Pizza Cook Off



A few weeks ago a couple of the girls at CS Just Fitness thought it would be a good idea to have a little competition to see who could make the best cauliflower base. By competition we meant a virtual can't even taste each others competition.


So I decided to use BBC Good Food's recipe below.


1 x Cauliflower

100g Ground Almonds

2 eggs beaten

1 tbsp dried oregano (I didn't have oregano so I used some garlic powder and mixed herbs)


FOR THE TOPPING

227g chopped tomatoes

1 tbsp tomato puree

1 garlic clove, crushed

1/2 large aubergine, thinly sliced lengthways into long strips

2 tbsp police oil, plus extra for greasing

1 small red onion cut into 8 wedges

1/2 small bunch basil leaves picked

125g ball mozzarella

25g Grano Padang or Parmesan (or vegetarian alternative) grated, plus extra to serve

A few pinches of chilli flakes


I didn't actually follow the topping recipe, I used tomato puree, mushrooms, kale and 1/2 ball of mozzarella

I found the hardest thing draining the cauliflower rice, its soaking wet and it says to use a tea towel, I can't get my head round this concept so I decided to squeeze handfuls into a bowl. WARNING - make sure you wait until its cooled down which I did not!


I made the base into a circle but one of the other girls made hers into a square which actually makes sense and is probably easier to get off the baking sheet (I used foil). She also baked hers both sides which I didn't so getting it off the foil proved a bit of hard work but it was do able.


Overall the pizza was really tasty, once you get the hang of the cauliflower squeezing I definitely think this could make its way into your weekly menu's.
